Yamaki Jozo

Founded in 1902, Yamaki Jozo has been crafting exceptional soy sauce and miso in Kamikawa, Saitama Prefecture, for over a century. Now led by fifth-generation Kitani-san and his siblings, the company remains steadfast in its dedication to traditional methods and meticulous craftsmanship. 


Yamaki Jozo’s commitment to quality begins with their pristine ingredients: Japan-grown whole soybeans, wheat, and pure natural spring water sourced from a local mountain. Over 20 years ago, they constructed a pipeline from the mountain’s summit directly to their factory, ensuring an uninterrupted supply of crystal-clear spring water.


At the heart of their craft lies the moromi (mash), which they consider the "soul" of their soy sauce. This moromi is aged for two years in traditional cedar barrels, imbuing their soy sauce with unmatched depth and character. So highly regarded is Yamaki Jozo’s soy sauce that it is presented annually to the Emperor of Japan—a true testament to its quality and legacy.
